Dhokla
Dhokla is a traditional Indian steamed dish made from fermented rice and chickpea batter.
It is typically served as a snack or breakfast dish, and is often garnished with mustard seeds,
coriander leaves, and grated coconut. My grandma and mom, both love this dish.
Here is a recipe for making dhokla at home:
Ingredients:
1 cup chickpea flour (besan)
1/2 cup rice flour
2 tsp sugar
1 tsp salt
1/2 tsp baking soda
1/2 tsp ginger-green chili paste
1/2 tsp citric acid (optional)
1 cup water
2 tbsp oil
For tempering:
1 tsp mustard seeds
1 tsp sesame seeds
1 tbsp grated coconut (optional)
1 tbsp chopped coriander leaves (optional)
In a large mixing bowl, combine the chickpea flour, rice flour, sugar, salt, baking soda, ginger-green chili paste, and citric acid (if using). Mix well.
Slowly add water to the mixture, stirring continuously, until you have a smooth batter.
Cover the bowl with a lid and set aside for 8-10 hours to allow the batter to ferment.
After 8-10 hours, the batter will have risen and have small bubbles on the surface.
