This is a dessert recipe, kindly shared by Ms Marikay as part of Project Roots. Pistachio Delight is cherished by all her family members, every Christmas and Thanksgiving.

Pistachio Delight
Crust
1 c. self-rising flour
1 stick melted butter
6 oz. chopped pecans
Mix and press into 9x13 casserole dish. Bake @ 350 for 20 min. (If baking 2, increase time to 25 min.)
2nd Layer
1 c. cool whip
1 c. powdered sugar
8 oz. cream cheese (room temperature)
Mix and spread gently over cooled crust.
Pudding Layer
2 (31⁄2 oz.) boxes of instant pudding (any flavor)
3 c. whole milk
Mix and pour over 2nd layer.
Topping
Spread Cool Whip on top then sprinkle with pecans. Chill overnight.
