Szechuan fish fry is a very simple dish to make, if you have homemade or readymade sauce.
Clean and apply some salt and turmeric to fish pieces and keep a side.
Meanwhile, in a pan , add little oil and add diced onion or shallots and some spring onions cut and saute lightly and keep aside.
In the same pan, add fish pieces and saute on both sides, turning a bit at a time, making sure to not break. After fish is half cooked, add tablespoon or more of sauce, as per your taste and then after couple of minutes, add shopped coriander leaved cook until ready.
Take turn not to break fish into many pieces and be careful with thorns, when eating. It is best to use thornless fish.
