Ingredients:
1 kg mutton, cut into pieces
2 onions, chopped
4 cloves of garlic, minced
1-inch ginger, grated
2 tomatoes, chopped
2 green chilies, chopped
1 tsp cumin seeds
1 tsp coriander powder
1 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala powder
Salt to taste
Oil for cooking

Heat oil in a pressure cooker and add the cumin seeds.
Once the cumin seeds start to splutter, add the chopped onions and sauté until golden brown.
Add the minced garlic and grated ginger and sauté for a minute.
Add the chopped tomatoes and green chilies and cook until the tomatoes are soft.
Add the mutton pieces and sauté until they are browned on all sides.
Add the coriander powder, turmeric powder, red chili powder, and salt and mix well.
Add enough water to cover the mutton pieces and pressure cook for 4-5 whistles, or until the mutton is cooked through.
Once the pressure is released, open the cooker and add the garam masala powder.
Cook for a few more minutes until the curry thickens to your desired consistency.
