Gajar ka halwa is a traditional Indian dessert made with grated carrots, milk, sugar and a mixture of spices. Here is a simple recipe you can try at home:Ingredients:
1 kg grated carrots
1 litre full-fat milk
1 cup sugar
1 tsp cardamom powder
2 tbsp ghee
2 tbsp chopped cashews and raisins (optional)
Instructions:
Heat ghee in a heavy-bottomed pan over medium heat.
Add grated carrots and sauté for a few minutes until they start to soften.
Add milk and bring to a boil. Reduce heat and let the mixture simmer for 20-25 minutes, or until the milk has been absorbed and the carrots are cooked through.
Stir in sugar and cardamom powder and continue cooking for another 5-10 minutes, or until the mixture becomes thick and creamy.
If desired, fry cashews and raisins in a separate pan with a little ghee and add them to the halwa.
Serve warm or at room temperature, garnished with more chopped nuts if desired.
