Gajar Ka Halwa

Gajar ka halwa is a traditional Indian dessert made with grated carrots, milk, sugar and a mixture of spices. Here is a simple recipe you can try at home:Ingredients:

  • 1 kg grated carrots

  • 1 litre full-fat milk

  • 1 cup sugar

  • 1 tsp cardamom powder

  • 2 tbsp ghee

  • 2 tbsp chopped cashews and raisins (optional)

Instructions:

  1. Heat ghee in a heavy-bottomed pan over medium heat.

  2. Add grated carrots and sauté for a few minutes until they start to soften.

  3. Add milk and bring to a boil. Reduce heat and let the mixture simmer for 20-25 minutes, or until the milk has been absorbed and the carrots are cooked through.

  4. Stir in sugar and cardamom powder and continue cooking for another 5-10 minutes, or until the mixture becomes thick and creamy.

  5. If desired, fry cashews and raisins in a separate pan with a little ghee and add them to the halwa.

  6. Serve warm or at room temperature, garnished with more chopped nuts if desired.
