Eggplant - 5 dishes

 Eggplant is one of the favorite dishes and there are many ways to make this vegetable. 

Eggplant needs to be diced and put in salt water. When ready, you will rinse thoroughly. My grandma said they used to do this, to kill any small bugs that may be in there. 

You can make a white eggplant curry with sesame seed paste and coconut. You can make a more spicy one called Bagara Baingan or you can roast and make Baingan Bertha or you can make a chutney out of it  or you can slice and cook as a whole and there are many more varieties.

Here is how to make sliced eggplant curry. 

Take eggplant and slice them. Take oil in a pan and add them and slow roast and keep turning them. Drizzle oil again on top and continue to cook. Once almost cooked, add spice powder and cook for 2 more minutes. You can add cashews and curry leaves.
