Egg Plant Fry

 Egg plant or Vankaya Fry


This is a favorite dish of many grand parents I talked to. Here is one version. 


Ingredients: 


Eggplant (Vankaya in Telugu)

Curry powder made with chana dal(Pappu Podi )

Onion(Optional)


Method:


1.Dice the eggplant, put oil in the pan, and then put the eggplant into the oil. 

2.After the eggplant color changes add a little more oil. If adding onion, you can add now. 

3. After eggplant pieces are completely cooked, add the readymade powder. If you do not have one, make the powder with chana dal, white urad dal and cumin and some red chillies. 

Add salt to taste, and the eggplant curry is ready. 


What else?


You can eat with rice / roti (Indian tortilla / bread)


If avoiding grains, you can eat with plain greek yogurt.
