There are so many varieties of chicken curry in Indian cuisine and other cuisines also have their own quota of this dish.
Here is one simple recipe for chicken curry that is very much liked my grandpa.
Take an onion and dice and saute in oil, until translucent.
Add whole spices like cardamom, cinnamon, cloves - one or two each depending on your spice level, and then add a spoon of shah jeera.
Add half spoon of ginger garlic paste and after it loses the raw smell, add one diced tomato.
After the tomato gets mushy, now add chicken pieces, a pinch of turmeric, salt and red chilly powder to taste, along with a spoon of coriander cumin powder or any chicken curry spice powder that is readymade.
Cook until chicken pieces are completely cooked, with the lid closed. If you want dry chicken, do not add tomato and open the lid after chicken is half cooked. When chicken is cooked, add few coriander leaves / parsley leaves and mix and cook for 2-3 minutes.
Tasty and simple chicken curry is ready to be enjoyed with rice and roti or just by itself.
