Here's a simple recipe that you can try.
Ingredients:
1 cup rice
2 cups of water
1 small lemon-sized ball of tamarind
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
Couple of green chillies and red chillies
1/2 tsp asafoetida
1 tsp chana dal and 1 tsp urad dal
1 tsp turmeric powder
1 tbsp sambar powder
1/4 cup roasted peanuts
Salt to taste
2 twigs of curry leaves
Instructions:
Soak the tamarind in warm water for 10-15 minutes. Squeeze the tamarind to extract the pulp and keep it aside.
Wash the rice and cook it in a rice cooker or on the stove with 2 cups of water.
In a pan, heat the oil and add mustard seeds, cumin seeds, curry leaves, dals and asafoetida. Fry until the mustard seeds pop.
Add the tamarind pulp, turmeric powder, chilli powder, green chillies, red chillies and salt. Mix well and cook until the mixture thickens.
Add the cooked rice and mix well. Add the roasted peanuts and mix again.
Serve hot with raita or any curry of your choice.Enjoy your tamarind rice!
